2 lbs catfish
1 whole shallot (minced)
1/3 clove garlic (minced)
2 scallion head (minced)
2 tblspoon sugar
1 tablespoon ground black pepper
2 tablspoon fish sauce
1 teaspoon MSG
1 can coconut soda/water

Ca Kho To | Vietnamese Braised Catfish
- 2 lbs catfish steak washed & cleaned with salt
- 1 whole shallot minced
- 1/3 clove garlic minced
- 2 head scallion minced
- 2 tbsp sugar
- 1 tbsp ground black pepper
- 2 tbsp fish sauce
- 1 tsp MSG
- 1 each coconut soda/water
- Cooking oil as needed
- Thai Chili for spice
- marinade the catfish steak with all ingredients (except the coconut soda)a couple tablespoon cooking oil in the marinade will help keep the fish moistcover and let marinade for at least 2-3 hours
- in a pan, add some cooking oil to cover.add a tablespoon sugar, spread evenly turn heat to medium high, and let sugar carmelized to a brown color
- drop in the catfish steak and seared evenly on both side of the steaks
- add in coconut soda water
- simmer on medium to low heat uncoveradd fish sauce to adjust to your tasteadd a few whole thai chili for color and spicesimmer until sauce is reduced and thickens
- garnish with black pepper and green onionsserve with white rice
