Secret Vietnamese Rice Noodle Soup Most Foreigners Run From | The Durian of Noodle Soup | Bun Mam

Bun mam Nuoc Leo is a noodle soup that will be hard to convince most foreigners to try. Even some Vietnamese can’t stand this rice noodle soup.

Viet Foodie (6920 Cook Rd Suite 110, Houston, TX 77072) caters to mostly Vietnamese. Their menu option is small but full of flavor that reminds me of Viet Nam. I always get their bun mam here.

Bun Mam is a fermented fish rice noodle soup. The smell of this noodle soup is welcoming for those that have adapted to it, but for some others, it might be strong and off putting. It’s sort of like the durian of rice noodle soup.

This soup is loaded with crispy bbq pork, seafood, eggplant, fish cake, and fresh veggies. I love the Rau đắng, herbal mints, bean sprouts, chives, and shredded banana flower that accompany this dish. The broth is a delicacy that’s hard to compare with anything else. A sweet, salted soup with lemongrass and spice. Add a squeeze of lime and thai chili, and you’ll be blown away! The fresh veggies compliments this soup with a crunchy and fresh taste.

If the smell of Bun Mam is too much for you, there’s other options for you too. The familiar pho and bun bo hue looks promising here too. Although I haven’t tried it here yet.

The Abalone Seafood Soup is super good too. Kind of like an eggflower soup with loads of crab meat, scallops, shrimps, shitake mushrooms, and abalone.

Or be a little bit more adventurous and try this same soup but with Pork Brain and thousand year egg. I heard eating pork brain makes you smarter btw….
