I have been cooking pho and perfecting my recipe since 200 pots ago… maybe even more?
There are many chefs with different techniques and recipe on how to cook pho. One popular way now is using a pressure cooker to make pho broth. That is perfectly ok! But for me, the pressure cooker don’t yield enough broth for me. And with the amount of bones I use, there’s just no way I am using a pressure cooker to make 3-4 batches.
This Pho recipe will definitely serves up at least 10-12 bowls! More leftover pho! YAY!
I use a combination of beef ribs and beef brisket as my main beef broth extract. Plenty of onions to add sweetness to the broth. I know many chefs use daikons for their broth, but I omit that because the daikon tends to over power the spice aroma. That is why next day pho that used daikon, don’t loses it’s aroma the next day. Just substitute daikons for extra onions. You won’t regret it!
For extra bold beef flavor, I recommend adding one can of beef broth (no msg). To balance it out, I add 2 cans of vegetables broth.
This recipe only takes 2.5 hrs from start to finish. Most of the prepping is done while the broth is boiling. You’ll surely be able to compare what a good pho should taste like!
