Traditional Vietnamese Home-Cooked Dinner | A Vietnamese Balanced Family Meal

Simple and heart warming. Its been so long since i had a family meal like this with the fam.

Sườn kho tiêu
Canh bầu
Rau muốn xào tỏi

Let’s make a traditional vietnamese home comfort meal.

From what I learned from mom, there’s always at least 3 dishes on the table. A protein, a soup, and either fresh or stir fried veggies. And of course white rice and fish sauce with chili on the side.

I’m using pork ribs to make the sườn kho. You can use pork belly to make thịt kho. I actually prefer the ribs because it’s a bit less fatty but quit succulent.

Wash 2.5 lbs pork ribs with salt and water.
Dry off and marinade with:

4 cloves minced garlic
1 minced shallots.
1 tablespoon sugar
2 tsp chicken granulate
1 tablespoon ground black pepper
2 tablespoon fish sauce
1 tsp msg

Over medium heat.
Some oil to cover a pan. Spread out a layer of sugar.
Heat until sugar melts and carmelized a brown color.
Add in the marinade meat and stir fry until they’re seared on all sides evenly.
Add in coconut soda until it covers slightly the meat.

Add extra fish sauce to taste, black pepper, and whole red chili.

Simmer on low heat uncover until the sauce reduces to a carmelized consistency.

As for the canh bầu. Squash soup.

In a small pot with about:
3 cups of water
Add some dried shrimps for flavor
2 tsp chicken granulate
And 1 oz rock sugar

Bring to a boil and add in the chopped squash.
Season to taste with fish sauce.

For our veggies, we’re making rau muốn xào tỏi. Stir fried garlic water spinach.

Pretty easy. Just plenty of garlic and a bit of shallots. Add in the pre washed and chopped rau muốn with a tablespoon of oyster sauce.

The tough part is actually stir frying this in this small pan. Eventually it wilts down to fit it.
