How to make easy and tasty xoi bap? This xoi bap recipe is as easy as can be! Instead of using yellow corn, I used hominy for this. Vietnamese corn sticky rice. There are a variety of recipe to make this, and each one has its own unique taste depending on the region of Vietnam you visit.

For this VIETNAMESE street food recipe, I will make the salty xoi bap version. This versatile corn dish is all up to you on what you want your toppings to be. It is a form of rice “substitute”. This is a street food where it is mainly sold in the early morning for breakfast. Wrapped in banana leaves and topped with all sorts of goodies.

For this recipe, my toppings are: mung beans, green onion oil, fried shallots, dried pork shreds, and dried shrimps. You don’t have to restrict yourself from these toppings. Top it off however you like!

Ingredients:
– sticky rice (long grain sweet rice)
– peeled mung beans
– 2 cans Hominy/corn
– Pandan Leaves

– salt to taste
– vegetable oil
– 8-10 large shallots (thinly sliced)
– green onions (chopped)
– dried shredded pork
– dried shrimps etc.
